Oatmeal cookies are one of my old standards and that’s because they are probably my most baked cookie. Chewy, with that coconut flavour, they are a family favourite.
I have bought the Christie variety and those taste alright especially dunked in a glass of milk but you simply cannot beat them from scratch. There’s really no comparison.
So here today is my Dad’s recipe, a quick and delicious snack.
Dad’s Cookies ( I often double this recipe)
Cream together
1/2 cup brown sugar
1/2 cup white sugar
1/2 cup butter
Add:
1 egg
1 tsp vanilla
1 cup flour
1/2 cup coconut
1 cup rolled oats
1/2 tsp baking powder
1/2 tsp baking soda
Mix Well. Grease a cookie sheet. Drop 1 tsp of cookie batter onto sheet. Cook til just light brown. Cool and place in an air tight container.
Enjoy with a glass of Moo!
