Dad’s Oatmeal Cookies

Oatmeal cookies are one of my old standards and that’s because they are probably my most baked cookie. Chewy, with that coconut flavour, they are a family favourite.

I have bought the Christie variety and those taste alright especially dunked in a glass of milk but you simply cannot beat them from scratch. There’s really no comparison.

So here today is my Dad’s recipe, a quick and delicious snack.

1/2 cup butter

Add:

1 egg

1 tsp vanilla

1 cup flour

1/2 cup coconut

1 cup rolled oats

1/2 tsp baking powder

1/2 tsp baking soda

Enjoy with a  glass of Moo!

  1. Kathy,
I love your photos and that your Dad had a cookie recipe. My dad had a grill cheese recipe. American cheese on white bread. Ate it until the day he died.

    Thanks Kathy for sharing,
    Ann
