Banana Chocolate Chip Muffins

Hello. It’s been awhile. I have had a CRAZY few weeks with lots of traveling for family related needs and now I’m back in my studio, and hopefully in my right mind. Ha.

So, I am doing some baking for my college son who doesn’t cook, barely does laundry and has no time for even grocery shopping. Momma thought these delicious and easy banana-chocolate chip muffins might inspire him. He may even share with his room mates, but I doubt it….

This recipe is tried and true and uses one of my favourite fruits-that all-purpose BANANA!

Here we go…

Ingredients:

1 3/4 cups all-purpose flour

1/2 cup granulated sugar

1 tbsp baking powder

1/2 tsp salt

1/2 cup semi-sweet chocolate chips

Measure these into a large bowl. Mix thoroughly and make a well. Set aside.

1 egg

1/4 cup cooking oil

1/4 cup milk

1 cup mashed up banana ( about 3 bananas)

Beat the egg in a small bowl until frothy. mix in cooking oil, milk, and bananas. Pour into well. Stir only to moisten. Batter will be lumpy. Fill greased muffin tins or muffin cups.

Bake in 375 degree oven for 18-25 min  depending on your oven. They should spring back when ready and be lightly golden brown. Makes 12.
