Today I was in the mood for baking up a tasty treat. I’ve never had too much interest in cooking however I have always baked. I have recently upped my baking game ( more on that later) and just felt in the mood. The snow was falling gently, and I heard a rumble in my tummy so my mind turned to sugar. I needed something that was effortless and reliable as well so I settled on an old favourite.
I just love making this scone recipe. It is a light and tasty treat of fluffiness. It is also really quick to make and only requires basic ingredients. Today we used strawberries and whipped cream ( english-style) however you can use whatever berry you like or just eat as is.
Recipe for Rich Scones
Mix the following in a large bowl.
2 cups all purpose flour
1 cup sugar
1 tbsp baking powder
1/2 tsp salt
Cut in 1/2 cup butter until crumbly.
Beat one egg lightly. Add 2/3 cup milk. Pour this mixture into dry ingredients and stir with fork to make a soft dough. Pat into 2 -6inch rounds. Place on parchment on a baking sheet.
Brush tops with milk. Sprinkle with sugar. Score each of the rounds into 6 pie shaped wedges. Bake in 425 degree oven for 15 min until golden. Split and butter.
Pairs well with a lovely pot of tea! Enjoy.

I’ve never seen a scone baked liked that, unusual, I have also done smaller individual scones, it would cetsainly make things easier lol
